Jenny sent this recipe and I wanted to try the corn part. I love eggplant but lately I feel like it is only good when fried. I served the corn next to a salad and it was delicious. You could do a lot with this...next time I want to saute tomatoes and garlic and add basil. It was very good with the butter and feta but it would probably be just as good if you make it vegan.

- We are three sisters who hail from a meat-eating Denver home. The oldest, based in MI, eats everything except poultry. The middle, based in London, is a vegetarian who thinks about a vegan diet, but loves French cheese and yogurt too much. The youngest, based in LA, eats everything execpt pork, incased meats, and mostly avoids red meat. Our passion is cooking and eating good food and this is our platform for sharing recipes with each other.
I made this again tonight, but did a green chile/onion/tomato mix on top. Very tasty.
